Jamon (Dry Cured Leg Ham) Iberico (Black Iberian Pigs) de Bellota (Acorns). 

Expect a dark crimson meat with a white fat. The leg has been deboned and cleaned. 

Jamon Iberico de Bellota has a rich, buttery and nutty aroma which carries through to the flavour. High quality Bellota is transformed by the pig’s diet of acorns and melts at a low temperature, meaning the flavour transmits to our palate extremely well.

During acorn season, the pigs roam 30,000 hectares of oak forests and eat up to 10kg of acorns for every 1kg of meat. The result is very large, free range pigs. By law, Jamon Iberico de Bellota must be aged for a minimum of 36 months, however due to the size of their pigs, Blazquez age theirs for up to 48 months.

You don't need to do anything to this product in order to enjoy it at its best; simply slice and serve. With such a rich, intense flavour, the serving size is as little as 20g per person, making this a surprisingly affordable luxury food product.  

Additionally, Blazquez products have virtually no wastage. Dice any leftover Jamon and use as a flavourful garnish, put into croquettes, through pasta - you name it. A 10g portion alongside fish, chicken or quail will provide an unmatched kick of flavour. Pair with a great champagne or sherry.
